Tofurkey sandwich

If you've been a vegetarian (in any form) or even if you're just starting out, I'll be the first to tell you, you don't have to sacrifice things you love, you can simply replace them. That being said, here is one of my favorite sandwiches to make.



How its made:

I lightly spread the Vegenaise on both slices of the bread (which I usually toast but decided not to today), put a slice of Oven-roasted Tofurkey on each slice of the bread and put a handful of spinach in the middle. 

This sandwich can easily be bulked up with more greens to your liking such as lettuce, cucumbers, sprouts, avocado etc.
